"Peanut Butter Cup" Bars
1 package vegan graham crackers (about 9 crackers), crushed into small crumbs
2 cups powdered sugar
1 cup peanut butter
1/2 cup vegan margarine, softened
1 cup vegan chocolate chips
1 teaspoon oil
1. In a bowl, thoroughly mix together graham cracker crumbs, powdered sugar, peanut butter, and margarine.
2. Spread the mixture onto the bottom of a 9x13" pan. In a small microwave-safe bowl, combine the chocolate chips and oil, and microwave for 30 seconds.
3. Mix the chocolate and continue to microwave at 10 second intervals until the chocolate is creamy and spreadable.
4. Spread the chocolate over the peanut butter mixture and place the pan into the refrigerator until the chocolate has hardened.

SO HOW'D IT GO?
Yum!!! These are so delicious. Because I have a peanut allergy I used almond butter, and because I was out of graham crackers I crushed up ginger snap cookies. At first I thought the ginger snaps might be too spicy in the mixture, but on the contrary, it was a definite party for the taste buds! I also freezed them due to lack of patience :)
I have made these several times now. I made them over the holidays and my family loved them. I do a few things different now that I've made them about 5 times.
I put my graham crackers in the food processor to get them nice an smooth.
I usually add one cup of powdered sugar instead of two.
I found that placing plastic wrap at the bottom of my pan helps taking the bars out to cut them easier. I get all pretty pieces instead of a few crumbly messy pieces.
I place the pan in the freezer for 30 minutes to harden everything faster. That way we can eat them sooner.
This recipe is so simple and easy. It's an instant winner!
HOLY DELICIOUSNESS!!! This was so amazing!! I'm 14 weeks pregnant and have been craving peanut butter cups. I wasn't feeling very patient the other night so I wanted to make something fast. I saw this recipe and went for it. My husband and I finished an entire platter of this in one day. I think my husband ate most of it. I loved these so much that I'm going to make these and give them away at Christmas and Hanukkah.
I changed a few things. I didn't have plan graham crackers I only had cinnamon. It made it taste even better I think. I don't own a microwave so I melted the chocolate on the stove. The chocolate started to get a weird texture so I added a little soy creamer (this is how we make chocolate sauce for our ice cream I just added less creamer). I also added a little vanilla extract while melting the chocolate. It came out great.
I HIGHLY recommend this recipe. You will not be disappointed. I wish the bars would have been around long enough to take a picture. I can't wait to make these again.
