Peanut Butter Oatmeal Cookies
1/2 cup unsweetened applesauce
1/2 cup vegan margarine, softened
1 cup packed brown sugar
3/4 cup sugar
1 cup peanut butter
egg replacer equal to 2 eggs
1 1/2 cup flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons vanilla
1 1/4 cup oatmeal
Preheat oven to 350 degrees Fahrenheit.
Beat together applesauce, sugars, margarine, peanut butter and "eggs" until sugar is dissolved. Add vanilla. Combine flour, baking soda and salt by stirring it into the mixture. Mix in oatmeal until just combined. If the batter is too wet, add more oatmeal. Drop tablespoonfuls onto ungreased cookie sheets. You can also use parchment paper. My mother-in-law uses a tablespoon dropper and it works really well.
Bake for 10 to 15 minutes until light brown.

SO HOW'D IT GO?
I added chocolate chips - yum! Followed the rest of the recipe to a t - used a baking soda/baking powder/flour/water egg replacer. Without the applesauce, they're kind of shortbread-like, but with it, they're moist and gooey (I underbake a little since I think the dough is the best part!). I also like these with half almond butter and half peanut butter. I'm making them for the third time right now! Whole family loved them, including the omnivores.
you have to add a lot more oat meal!
i just made these cookies tonight and they are soooooooooo good even my carni mom loved them. I think they would be good with tofutti ice cream in the middle. ;)b
