Peanut Butter Power Mix
1 tablespoon all natural peanut butter
small amount of agave nectar (depends on your taste)
1 tablespoon raisins
1 teaspoon sunflower seeds
1 teaspoon sesame seeds
1 teaspoon pumpkin seeds
1 teaspoon coconut flakes
(All these measurements are just rough estimates. Use more or less if you like)
Mix all the ingredients together in a bowl.
Eat like that, or, make a ball and roll it in either the sesame seeds or coconut flakes. You could always double or triple the recipe and make smaller balls. I would suggest that if you do make the balls, refrigerate them for a half hour or so, until they're firm.
This is a really great snack or dessert. This recipe is very similar to the Power Balls I used to get at my local organic foods store, only they used honey and chocolate chips. It's so simple to make, and it's great for someone who has a sweet tooth like me! Just be sure not to eat it all the time though. I would imagine the fat content to be quite high because of the peanut butter and all the seeds.
SO HOW'D IT GO?
Instead of rolling the mix into a ball, I scooped it into a teeny-tiny bowl. I used carob chips instead of raisins and added 1 teaspoon agave for some sweetness.
These are great snacks for a vegan diet! I put mine in non stick cupcake tins and eat them throw out the week (sans le coconut though, not a big fan the coconut.)
Fantastic after run pick-me up. I added chocolate chips, a touch of vanilla and a shake of nutmeg in mine. Rolling it in coconut flakes was a great suggestion to keep the balls from sticking to your fingers! I calculated them at 220 calories though (but that's also with a teaspoon of chips added), 17 grams of fat, and 6 grams protein.
This is a great athlete/runner recipe. I had gastric bypass a year and a half ago and this is great for bariatric patients too. Yummy and chock full of protein. Great for after a weight lifting session!
