Potato with Carrots in a Sweet Ginger-Soy Sauce
1/4 cup soy sauce
2 teaspoons ground ginger
1 tablespoon sugar
1 large potato
3 spring onions (green parts only), sliced
2 medium sized carrots, sliced
1. Preheat the oven to 400 degrees F. Mix the soy sauce, sugar and ginger together for sauce.
2. Cut a cross into the potato. Put some of the spring onion rings into the cross of the potato. Next drizzle the sauce over the potato on a plate.
3. Take a large piece of tinfoil and fold it over. Fold over the edges of two sides so that it forms a pouch. Put all the ingredients, including the sauce, into the pouch and fold over the remaining edge so that it is fully closed.
4. Place it into the oven for 75 minutes without opening the pouch! Take the pouch out of the oven and onto a plate. Rip it open with a knife. Be careful of hot steam!

SO HOW'D IT GO?
I loved this sauce. However, I initially couldn't figure out exactly how to assemble the potato + carrot + sauce + foil....so I just sliced everything and tossed it in a covered casserole dish. It worked great. The carrots tasted so good baked with these flavors. I might just use all carrots next time and bake me a potato separately.
