Potato Cauliflower Soup

What you need: 

4 med potatoes
1 med head of cauliflower
1 med onion
1 peeled carrot
enough water to cover potatoes

What you do: 

Peel and cut into bite sized pieces 4 potatoes. Clean and divide cauliflower into small sections. Peel and dice 1 med onion. Dice carrot finely. Boil potato in just enough water to cover. Boil or microwave cauliflower, onion, & carrot just until cauliflower is tender. Use as little water as possible. When potatoes are tender, mash lightly, leaving some chunks left unmashed. Do not drain water. This is what makes the soup thick.
Add the cauiliflower, onion, and carrot. Add salt and pepper to taste. (I like a little garlic powder also).
If soup is too thick, add a little more water. Simmer for about 25 minutes more.

SO HOW'D IT GO?

Good stuff! I added some butter to the soup and it made it nice and velvety.

This is really easy to make and the result is a yummy, very thick soup. I especially like that you don't need any vegetable stock (which I never seem to have when I need it).

When I make it, I don't cook the vegetables seperately from the potatoes, I just boil them one after the other. I often put in some extra vegetables that aren't in the recipe like broccoli and celeri. I also don't bother mashing any of the potatoes because they seem to do it on their own.

I was suprised by how good this was. I don't think I used enough water because it was like mash potatoes but I liked it like that.  I used a lot of garlic powder too( I love garlic). very easy recipe as well!
