Potato Chowder
3 average sized potatoes, peeled and diced (russet or Yukon gold, preferably)
2 tablespoons margarine
1 tablespoon flour
white pepper, to taste
1/8 teaspoon freshly ground sea salt
1 1/2 cups nondairy milk (I use soy)
1/2 white onion, chopped
garlic powder or salt, to taste
fresh chives, for garnish
1. In a medium frying pan, cook the potatoes through, and set aside. In a medium sauce pan, melt the margarine on low. Once melted, add the flour, sea salt, pepper, and mix thoroughly.
2. Add the milk all at once. Cook quickly, stirring constantly until the mixture thickens and bubbles. Reduce heat to low, and add the potatoes, onions, and garlic powder or salt.
3. If at this point the soup is too thick, one may add milk; if it is too thin, a small amount of arrowroot powder may be added to thicken it up.
4. Continue to heat on low, stirring occasionally, until the onions are tender. Separate into soup bowls and garnish with chives. Serve.

This was very good, although I cannot imagine what it would have been like if I hadn't doubled the broth! I used rice milk, and added some garlic powder and a little extra salt. I did have to add some arrowroot to get it to the nice thick chowder consistency. It was quick and easy, and I really enjoyed it!
This time I added the amount of butter listen.. and when I added the flour to it, it turned into clumps which I had to dissolve with the soymilk.. and then the liquid never thickened so I had to add more flour. Maybe next time I'll add the milk in first and mix the flour into that. But this batch came out better than the last :)

I thought it was amazing. I changed it up a little bit.. Instead of peeling potatoes, I just used half a bag of Ore Idas hash brown cubed potatoes. I grilled them and added them to the cream. Which I put too much butter into but otherwise it came out amazing. Best chowder I've ever had :)

oh, man, it's raining today and i thought - potato soup sounds good. little did i know this recipe would become my new favorite soup of all time. i made some changes: i left the skins on the potatoes, because i like skins and to give the soup another color besides white. i also sauteed the potatoes with a clove of fresh garlic and added garlic powder with parsley to them while they were in the pan. okay, i'm an addict, i also added garlic to the melting margarine. i doubled the broth recipe and put in a touch more flour than the recipe calls for. beautiful. thank you so much!
I didn't get to eat any because my husband ate it all! ;D But he says it's delicious!
Hehe, I actually did have some (just one bowl that I had to fight to get!) but it was REALLY good. My mother used to make me potato soup when I was sick, and this reminded me of that. I added two freshly diced garlic cloves instead of dried garlic powder because I didn't see it in the ingredients list.

I love this recipe, though I omitted the margarine.
I suspect the reviewer above possibly used the regular, sweetened soymilk--unless you specifically buy unsweetened it will probably have evaporated cane juice or another type of sugar added. Salt can always be added as well--I prefer it salty, too, though adding salt is not so healthy.
Well, to be perfectly honest I wasn't very happy with this recipe... Sorry! I hate to be the meanie, but it was to sweet for me. I like my potatoes salty... but my mom loved it.
I used extra onion and another spice...
This turned out sweet, but very good. :-)
I liked the surprise sweetness.
