Potato Latkes

What you need: 

1/4 cup onion, chopped 2 egg substitutes (I use 3 teaspoons Ener G + 4 tablespoons water) 1 teaspoon salt 1/4 teaspoon pepper 2 tablespoons matzo meal (or cracker/bread crumbs) 3 cups golden potatoes, shredded oil, for frying (not olive oil)

What you do: 

1. Sauté onion is a large skillet until almost translucent and remove from heat. Mix egg replacer, salt, pepper, and matzo meal with potato. 2. Add sauteed onions and let the mixture sit for a couple minutes while you heat oil for frying. 3. Spoon mixture into oil like a pancake and fry on both sides until golden brown. 4. Remove and let drain on paper towels for a few minutes. Eat with applesauce and/or vegan sour cream!

This recipe was OK, but I'd recommend using a  LOT less salt...my family thought they were good, but much too salty. Also, I couldn't taste the olive oil, so I don't think it actually matters either way. I can't find Ener-G anywhere in my area, so I used flax eggs instead (two and a half tablespoons flax meal plus 3 tablespoons water makes the equivalent of one egg.) They were pretty good...but again, I'd definitely cut down on the salt.

My omnivore likes to make these when we have lots and lots of potatoes and want to cook them fast!

The best way to cook is as follows:
Get the oil pretty darn hot in a large frying pan. Then toss the whole mess in and spread it out. After about 2 or 3 minutes, use a flat spatula to "cut" it into quarters, then flip the quarters individually. This makes them easy to handle and yummy crispy on the edges.

The best side is as follows:
While the pancakes are cooking, fry up some zucchini slices and some sweet peppers in a smaller saute pan - and be sure to season with salt & pepper on that too.

The best way to serve is as follows:
Plate one of the pancakes, smear a hearty spoonful of red pasta sauce on top, stack with the zuke/pepper combo, then put another pancake on top. Presto! An italian potato tower!
