Potato Soup
3 medium potatoes
2 tomatoes
1 onion
2 teaspoons of cooking oil, whichever you prefer
salt
pepper
a little branch of fresh oregano
water
Peel and cut the potatoes French-fries style. Slice half the onion. Heat the oil in a saucepan and add the potatoes and the onions, stir constantly so they won't burn. Cook for about 3 minutes, until they begin to get a little transparent.
Blend the tomatoes with the rest of the onion and a cup of water, add the mixture to the potatoes, but be careful with the hot oil! Add more water so you have enough to cover the potatoes twice.
When it is boiling, add salt, pepper and the oregano. Let it cook for about 15 minutes or until the potatoes are tender. Try to check the salt and it's ready! Enjoy.
If you eat eggs, boil one and when you serve the soup add slices of the boiled egg, that's how my mom serves it.
