Quick and Easy Mini-Cinnamon Rolls
Rolls:
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
6 tablespoons vegan margarine (I use Earth Balance)
3/4 cup nondairy milk
2 tablespoons melted margarine
1/4 cup Sucanat sugar
1 tablespoon ground cinnamon Icing:
1 teaspoon margarine, softened
1 cup vegan powdered sugar
nondairy milk (I use soy), as needed
1. Preheat oven to 450 degrees F, and lightly grease baking sheet. Mix dry ingredients first, then cut in margarine. Mix in milk until dough is soft (you may need slightly more or less to get the dough to a workable consistency). Do not over mix!
2. Roll dough to 1/4" thickness in a long rectangle, about 8x16". Using a pastry brush, coat the rectangle of dough with the melted margarine. Then spread the Sucanat and cinnamon over it.
3. Roll from the long end, forming a tight roll. Cut rolls about 1" thick. Place on prepared baking sheet and bake for 15 minutess, or until golden.
4. While rolls are baking, make icing by mixing margarine and powdered sugar. Slowly add milk to reach desired consistency. Spread on rolls while they are still warm.
The rolls themselves are not sickeningly sweet, which makes for good contrast with the icing. Compared to other cinnamon roll recipes, this one is extremely quick and easy, but still soft and tasty!

Omg I forgot about this amazing awesome recipe, I have to make these again soon, these are soooo good! I think I had usually made them with whole wheat, going to try some other whole grain flours this time.

I really like these and have made them many times. I always make ground nuts with spices for the filling portion.
Going to give the recipe a whirl with soy or coconut flour one of these days.
Oh my goodness! These are amazing. Like the name states, they really were quick and easy to make, and they taste delicious. The only changes I made were to add a pinch of cinnamon to the icing and to cook them for about half the time stated because my oven is ridiculous. Thankfully they are one of the few foods my omni family haven't turned their nose up at upon hearing that they were vegan (they loved it by the way, even my Dad who hates sweet food), otherwise I think I'd be at serious risk of eating the whole recipe myself. Thank you!
SO GOOD! I decided to just roll with my lack of milk sub and used water; it worked fine! I also decided to add just a pinch of sugar and cinnamon to the dough and I'm glad I did. I also added molasses (maybe a tablespoon? I eyeballed it) and sunflower seeds (in lou of nuts) to the filling and both were fantastic additions. So happy I made these tonight; I can't wait to share them!!

I pretty much followed the recipe except No salt, and I subbed 1 tablespoon margarine (in dough)with olive oil. The dough wasn't sticky for me at all and it was workable and easy to use. I used coconut milk in my dough and frosting because it adds a nice flavour =)
I use lots of margarine and plain old sugar and cinnamon on the inside. They aren't soft all over like Pillsbury, they're a little crispy on da outside but soft and gooey within. I didn't mind the bit of crispiness.
I want to try nutmeg, cinnamon, and brown sugar in the dough next time and experiment with freezing them :)
Sorry to be a party pooper, but these were really, really bad. They were dry and crumbly on the outside, and pretty uncooked on the inside. That wouldn't have bothered me so much if it tasted good. But it was really, really bitter. I have no idea why. I forced myself to eat one with a lot of icing, but had to throw the rest away. I did like the frosting, though.

These were heavenly. But not mini. That may be because i didn't cut them small and didn't roll it extremely tightly.
I added vegan cream cheese and orange zest into my icing and i almost died of happiness after taking a bite.

My only recommendation is to use a pan that keeps the rolls tightly against each other, otherwise the wonderful filling falls out!
