Quick and Easy Yeast-Free Oatmeal Whole Wheat Bread
nonstick spray
1 cup old-fashioned oats
1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon sea salt
1 tablespoon unsweetened applesauce
1 cup nondairy milk (I use rice)
sunflower seeds, to taste
pumpkin seeds, to taste
1. Preheat oven to 450 degrees F. Liberally spray a glass loaf dish to prevent sticking - this is important! Also it is crucial to use a glass loaf dish and not a metal one, as the metal one will prevent the bread from rising very much. In a large bowl, combine the oats, whole wheat flour, baking powder, and salt.
2. In a separate bowl, dissolve the applesauce into the milk. To save time, I usually drop the applesauce into a 1-cup measuring cup, then add the milk on top of it and stir well. This is crucial too - one time I didn't mix them, and the bread fell apart because the applesauce didn't get spread into the batter.
3. Add the applesauce/milk mixture to the dry ingredients and stir just until combined. Pour the batter into the loaf dish and spread using a spoon. The batter will be really really wet and not really look like bread dough, but just trust me, it's the way it should be.
4. After you spread it out, grab some sunflower and pumpkin seeds and sprinkle them on top of the dough. Use the back of a spoon to gently press the seeds into the dough. Bake 20 minutes. Remove and let the bread cool on a wire rack before you try to cut it.
My husband and I eat this bread almost once a week. It is awesome with some vegan butter and homemade soup! Enjoy!

Oh yummy, yummy! This was wonderful! I added a tiny bit of Stevia to the mix for some sweetness and baked it a round glass pie plate...it turned out delicious!! I spread some Earth Balance and a bit of honey over a few pieces while it was still hot and how good it was! Thanks for such a great recipe! :)
This bread was wonderful! :o Moist and tasty, no yeast or sugar! I love that it's so healthy. I only had sunflower seeds to top it with, and being that I'm not vegan, I used a full fat goat milk in place of the soymilk. Other than that, I followed the recipe exactly. Thank you so much for the recipe!
This was good but my loaf didn't rise very much. I followed the directions, is the loaf supposed to be about 2 inches tall?
Sorry, I am about 2 years late with my reply! Yes, the loaf is very short and squat - 2-3 inches tall sounds about right. That's the tradeoff - short cook time, short bread! :)

I was so skeptical while this was cooking b/c it looked so "squat," but don't worry about that! It tastes great, and when sliced into 1/2 inch slices and laid on their sides, it resembles (and tastes like) bread you'd get in a high-end restaurant in a little basket! I followed the recipe exactly except that I used coconut oil instead of applesauce. It turned out great!

I did make some major changes, but it turned out lovely despite that (I used a 9-grain oatmeal, soymilk and topped it with wheat germ and flax meal). Given that it was less than 4cm tall I was suprised how tender, almost biscuit like it was. We chunked it up into squares and even my sisters health food phobic boyfriend had a second piece :)>>>
This was great! I was very surprised it turned out considering I halved the recipe & still used a regular size glass loaf pan. I skipped the nuts and instead put ground flax and wheat bran on top. (Talk about fiber supplement!) It was SO surprisingly tasty!!! ;)b Yum!

thank you for this Veggeroni- I truly enjoy healthy bread & this was so easy to make! I used soy milk (just didn't have anything else- but can imagine a nut milk would be lovely too) instead of the reccomended rice & it came out fine. I added 2 TBS of milled flax & also added some sunflower seeds into the bread mix & on top (I love lots of stuff in my bread... I so miss the jogging or health bread in Germany!). I took your advice on using glass as opposed to metal... but baked it in a round glass dish- since i didn't have a glass loaf pan...
My German husband came home & said "Mmmm bread"? He liked it too. Hoorah!

Okay this is TOO funny! My hubby and I used to live in Germany!! And we always loved the wonderful fresh brotchen rolls with sunflower and pumpkin seeds we used to get there! AND we often used to get them after RUNNING in the vineyards near our apartment!! LOL that is too funny!! I'm soooo soooo pleased that you liked the bread. We love it so much. I literally just finished two slices about 15 minutes ago! ;D Thank you so much for your nice comments. I followed the recipe as written. I will finish the loaf because it is healthy. For how easy it is to make, it's not bad, but I think I was in the mood for something else.
I'm not sure what I was expecting since this is a no yeast bread, but it turned out very dry, dense, and bland. I won't be making it again.
I'm sorry this didn't work out for you. :( Did you make any changes to the recipe? It definitely doesn't rise much since it is yeast-free, but I've never had it come out dry, in fact, it's usually pretty moist. ??? Maybe you found it bland because there is no sweetener in it? It's definitely a "healthy" bread because I don't like yeast or added sugars. Oh well, thanks for trying it anyway!
