Quick Edamame Soup
1/2 tablespoon peanut or vegetable oil
1/3 cup scallions, sliced
1 1/2 tablespoons garlic, chopped
1 teaspoon minced ginger, optional
2 small carrots, peeled and sliced on the diagonal
6 1/4 cups low sodium vegetable broth
1 cup frozen edamame beans
1-1 1/4 tablespoons low sodium soy sauce
1/2-3/4 teaspoon chile garlic sauce
1/4 teaspoon toasted sesame oil
5-6 ounces rice noodle pasta (I use 1/3 package of Thai Kitchen Brand)
salt, to taste
1. In a large soup pot or cauldron, place the oil and bring it to medium heat. Once hot, add the scallions and sauté for about 1 minute. Add the garlic, ginger, and carrots and allow to sizzle for about 15-20 seconds more.
2. Add the broth, put the lid on at an angle, and bring the heat up to reach a boil. Once boiling, add the edamame. This will cool the soup down again, so bring it back up to a boil and allow the edamame to boil with the lid at an angle for only 2 1/2 minutes.
3. Remove the lid, stir, and add the soy, chili garlic sauce, and sesame oil. Stir again and add the rice noodles.
4. Once the rice noodles have been added, immediately move the soup from the heat and allow it to stand off the heat for about 12-14 minutes stirring from time to time, until tender. Taste, and adjust seasoning, if needed.

This is a great recipe. I doubled the edamame.
I used chopped sweet onions, shirataki tofu noodles and didn't use the chile garlic sauce. So freaking awesome and addicting! :)>>>
This is sooo yummy, I make it often. Tonight I made it with Buckwheat Soba noodles... mmmmm :)
Hey Healthy Momma! I'm glad you guys liked it. I hope you will try it with broth or even with a low sodium bouillon one day when you have some-it's so flavorful and amazing. Oh, and I think broccoli sounds really good too actually. I might throw that in next time...
This soup is delicious! It is also easy, made easier by the fact that someone else made it for me... This was a hit with the family. We didn't have broth, so water and salt was what was put into it. We also added some nutritional yeast, as I do with most soups. This would also be yummy with some broccoli. Next time we'll at least double it cause we all wanted to eat more!
Yeah - soba noodles cook quickly so I didn't have to boil it very long. Maybe another 3 or 4 minutes.
Hi Hop Frog! I'm glad you liked it even without enough broth. Ooh, and soba noodles sound almost better than rice noodles. I suppose you had to boil them though rather than just allow for a sitting time as is done with the Asian rice noodles?
We really liked this. I didn't have low-sodium veg broth (sorry), so used 2.5 cups broth and the rest water and thought it tasted fine. Also subbed soba for the rice noodles because that's what I had. Otherwise followed the recipe, very flavorful.
