SO HOW'D IT GO?
This looks so good. I think I might make this this weekend!
This was delicious! I did do some alterations based on what I had. This is definitely a very flexible recipe. I chose it because we wanted something healthy, and that we had ingredients for.
I slowly sauteed some leeks instead of green onions, and added some orange bell pepper. We don't buy cherry tomatoes, just used regular. I also used 3 lemons instead of limes (we never buy limes), and used a dash of cayenne instead of the red pepper.
It was delicious!
Some leftover ideas: It's good cold, but it's also good wrapped between two pieces of toast and a bit of avocado!
;)b THAT WAS SOOOOO GOOD!! I'm not a fan of quinoa but I think you have single handedly changed my opinion. :)>>> Next time I need to put more green onions in the salad.
YUM!
I made a couple substitutions based on what I had/like yellow onions sauteed in olive oil for the green onions, canned tomatoes, parsley instead of cilantro (Not a fan), and finally, I added garlic and went light on the olive oil.
I usually don't like quinoa--but it was in my pantry and I had all the ingredients. Changed my entire view on quinoa! :)
I made this exactly as the recipe stated and it was so, so good! There are obviously a lot of "what you have in the frig" variations for this as well! ;)b
This recipe is very simple and tastes great. I've made it 3 times already this summer season!
I made this for dinner for my boyfriend's mom and her new man...It was a big hit!
I used about a 60/40 blend of quinoa and white rice, but otherwise followed the recipe exactly. The two limes I used yielded A LOT of juice (almost 1/4 cup!) and I felt that it overpowered the flavor a bit. Perhaps just a few teaspoons would have been the perfect amount....in any case, it was delicious. It made enough leftovers for several at-work lunches, which were even better as the flavors developed over the next few days.
I used a little too much lime and forgot the cumin b/c I accidently got curry. Also, i substituted fire roasted diced tomatoes for the cherry kind. Still, its a great protein rich summer salad!
I followed the recipe just as it was, and the wonderful mix of lime, cumin, cilantro and tomatoes was wonderful!! This makes a beautiful salad.
Really good, used 50:50 rice and quinoa and forgot to add cumin but still flavoursome
