Raw "Take the cake" Carrot and Raisin Bar
1/2 cup filtered water
1 teaspoon vanilla
1 cup pecans
1 cup sunflower seeds
1/4 teaspoon fresh zested lemon peel (zest 1/2 lemon)
1 medium carrot, chopped
1/2 cup raisins
1. Mix the water with the vanilla, and soak the nuts and seeds for 4 hours. Then process all ingredients but the raisins. Once mixture is smooth, stir in raisins.
2. Make patties or bars out of combined mixture. Make them thin.
3. Place in food dehydrator (best method) and dry for 12-24 hours (or until dry.) Turn patties after 6 hours.
4. If you do not have a dehydrator you can preheat oven on lowest setting (mine was 170 degrees), place patties on cookie sheet lined with paper towel or paper bag (make sure to check them occasionally; this helps them dry and not stick), and dry for 5-6 hours. Turn the bars over after 2 or 3 hours. If you like your bars really crisp (like me) it would be good to check them near the end and see if they need more time.
All ingredients should be raw, organic and non-irradiated, whenever possible.
Tastes like a cookie, and a little like a carrot cake, but without all the sugar.

SO HOW'D IT GO?
this did not work out for me at all. It tasted awful. I did not soak the nuts in vanilla (I forgot), so maybe that it why? I couldn't imagine that one step making the whole difference between good and bad. Since I didn't follow the directions I won't rate this recipe, but I will say that I don't think it would have turned out even if I did follow the recipe.

wow, these were so easy! i didn't have any nuts so i used roasted (i know not raw) apricot pits instead, they're really cool, they look like almonds but taste sort of like apricots. i didn't have any raisins so i added some raw sugar. im so excited for them to be ready!
I'm looking to incorporate more raw food into my diet and these sound awesome based on previous reviews! I'm going to try using my oven's pilot light because I don't have a dehydrator. I'll update soon :)
I just realized that I never updated this post! They came out really great even though I don't have a dehydrator. I will add a little agave next time...
I thought these were great! Instead of raisins, I added about 1 cup of dried, sweetened cranberries and processed them with the rest of the ingredients, instead of leaving them whole.
The bars had a slightly tangy, slightly sweet taste. Instead of making large, candy-bar sized bars-- I made lots of little bars (about 1" x 2").
I ate a handful of them as a snack or as an on-the-go meal.
I'll definately be making these again!

These taste really great, but like someone else said they did crumble pretty easily so I will probably add more water next time or maple syrup....
However I am giving this 5 stars becuase they taste amazing.
I made them in the oven and added more lemon rind than than called for... the tanginess definitely gave it a kick.
i am so amped to make these!
i don't have a dehydrator, so doesn't putting these in the oven, even on a super-low setting cook them and defeat the raw-ness?

i was looking at buying a dehydrator but all of them have round shallow looking levels, how do you 'cook' this recipe in a dehydrator?

These are very tasty. I used some blue agave syrup for some sweetness, and added 1/2 tbs. of pumpkin pie spice. The bars crumbled easily, so I made it into a granola snack! ;)b
