Rhubarb and Walnut Cake

What you need: 

4 to 5 cups flour
2 cups soymilk, warmed slightly
1 tablespoon dry yeast
2 tablespoons oil
1 pound rhubarb, peeled and sliced
3/4 cup sugar
handful chopped walnuts
1 tablespoon potato starch

What you do: 

1) Mix yeast into warm milk and let stand for 10 minutes. Mix in flour to form a thin dough. Let rise for 1 hour.
2) Meanwhile, mix peeled and sliced rhubarb with sugar, walnuts and potato starch to make the topping.
3) Once the dough has tripled in size, slide it into a greased baking pan and smooth out. Spread rhubarb mixture on top and bake for about 25 minutes at 350 Fahrenheit. Enjoy!
