Rick's Casserole

What you need: 

1 package soy crumble (plain)
1 jar spaghetti sauce (your favorite kind)
1 12-16 oz package of noodles ( I use something fun looking)
vegan tofu sour cream
vegan soy mozzarella cheeze

What you do: 

This is one of the easiest recipes you will ever prepare. I took my grandmas recipe and modified it to be vegan. This was one of my favorites growing up and now it will be one of my kids favorites. Enjoy!
Cook noodles by manufactures instructions. Heat up soy crumble. Mix in spaghetti sauce once crumble is heated. Drain noodles and place in casserole dish. Mix in sauce mixture. Drop in about 4-6 spoonfuls of sour cream. Mix up until it looks creamy. Top with cheeze and foil then bake at 375F for approx. 30 mins. I remove foil and bake until cheeze is bubbly.

Well, I did make this for dinner and it was quick, easy and delicious.  I will have leftovers for lunch (and dinner) tomorrow.

This was delicious! :D I sauteed half an onion with my soy crumbles (which was actually Gimme Lean sausage), along with a lot of basil, chives, garlic, onion powder, garlic powder & dried rosemary. Next time I will add a lot of veggies to this so it's more healthful, but wow! And I loved the melted Follow Your Heart "mozzarella" that I used on top. I was really skeptical about how that would taste because I haven't been the biggest fan of store-bought soy cheezes... But it was golden & bubbly & delicious! I will definitely be having this for lunch tomorrow!

I thought this was pretty good, very easy and delicious!  I used homemade seitan meatballs instead of the soy crumbles and it worked out really well.  I omitted the sour cream, added an onion / minced garlic, and used broken up lasagna noodles.  I will definitely be making this again.  Thank you.

This recipe was really great and really easy.  There's really almost no work involved for such a fulfilling casserole!

Hearty and filling.
I added sauteed onions, garlic, green pepper, carrots, corn, and zucchini.
Yves Mexican Ground Round gave it a some spice too!

I used also the Gimme Lean sausage when I made this and it turned out so so so good. I have made it several times now because it is just so tasty and makes great letovers.

I made this casserole last night and it was amazingly good! I added 2 cloves of minced garlic and a chopped onion to the veggie crumbles and it was really delicious. I imagine one could also add some chopped veggies to make it feel not so carb-heavy.
