Roasted Artichoke
What you need:
1 artichoke, pre-cooked
1/2 tablespoon olive oil or vegan margarine
1 tablespoon balsamic vinegar
1 teaspoon brown sugar
1 small garlic clove, minced
pinch salt
pinch basil
What you do:
1. Preheat oven to 500 degrees F. Place cooked artichoke in the middle of a large square of aluminum foil.
2. Top with all other ingredients, then seal foil, enclosing the artichoke in a pouch.
3. Roast in the oven or over hot coals for 6-8 minutes, turning pouch over halfway through cooking time.

The way joy of cooking says to cook an artichoke, is that you cut off the stem and tips, put it in a bowl stem-side down, pour about a 1/4 cup of water in, take a second bowl and invert it and put it on top to cover the artichoke. Then microwave for 7 minutes, be sure to use hot pads when removing the bowl, and be careful the steam when you remove the upside-down bowl on top.
How do you cook an artichoke? Do I boil it?
