Roasted Cauliflower with Indian Spices
2 tablespoons canola oil
3/4 teaspoon salt
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/4 teaspoon turmeric
1/4 teaspoon coriander
1/4 teaspoon garlic powder
1 large head cauliflower, chopped to bite sized florets
1. Preheat oven to 400 degrees F. Line a large, rimmed baking pan (11 x 15" works nicely) with foil (you don't have to do this, but it makes cleanup a lot easier).
2. In a large bowl, mix together the oil, salt, spices, and garlic powder. Add cauliflower, and stir until the cauliflower is evenly coated with the oil and spice mixture.
3. Spread the cauliflower in a single layer in the baking pan. Bake for 20 minutes, stir (trying to turn as many pieces over as possible), and bake for another 15 minutes or until the cauliflower is tender and browned.

SO HOW'D IT GO?
This was simple and good--I can imagine using the same spice blend on sweet or white potatoes. Mine took a lot longer than 35 min to cook, but maybe my oven wasn't hot enough.
My oven may run a little hot--I'm still getting to know it. I also cut the pieces fairly small--I had written the recipe as "bite-sized florets" but that got changed in the editing process.
