Salsa Fresca
1 can of diced tomatoes no salt added (14.5 oz)
4 medium size roma tomatoes
1/4 of a large white onion
1 handful of cilantro
2 Serrano chilies
1/2 teaspoon of cumin powdered
1/2 teaspoon of garlic powder
the juice of half a lime
salt to taste
Take your can of tomatoes and put it in a blender along with the 2 Serrano chilies (roughly chopped). Add the cumin, garlic, and salt to taste. Blend.
Dice the tomatoes and onion and put in a large bowl (larger than a cereal bowl. This makes a lot of salsa) Pour the pureed tomatoes over the diced veggies. Roughly chop the cilantro and add to rest of ingredients. Add lime juice and mix with a spoon...ta-da!!! Youve got quick and delicious salsa.
You can also increase or decrease the amount of chilies depending on your like of spiciness.
