Sautéed Red Cabbage with Apples and Walnuts

What you need: 

1 tablespoon olive oil
1 small head red cabbage, halved, cored and thinly sliced
1 shallot, finely chopped
1 tart apple, chopped
1 tablespoon cider vinegar
1/2 cup walnut pieces
2 teaspoons lemon juice

What you do: 

1. In a large sauté pan, heat olive oil over medium heat. Add cabbage. Cook until it starts to soften, stirring occasionally, about 5 minutes.
2. Add chopped shallot and stir to distribute. Let cook about a minute. Add apple pieces and stir again. Cook for 3-5 minutes or until apple starts to soften.
3. Add the cider vinegar and walnuts. Stir and cook until heated through. Squeeze a little lemon juice on top. Enjoy!

SO HOW'D IT GO?

I enjoyed this and it was a big hit at a party my family and I had for Oktoberfest.  This is a great side, Autumn-y dish.  I added some more cinnamon and cider vinegar the second time I made it and I also added raisins.

This was good.  However, I changed it a lot like the other users....

I used balsamic vinegar, added raisins and pine nuts and some agave nectar.  I grew up eating fried sweet cabbage, so I like it with a little added sweetener.

This was a promising idea, but lacked taste. So I made it again, and this time I used quite a bitmore vinegar and an extra apple, plus a couple of dessertspoonfuls of  raisins, a dessertspoonful of honey and a generous dash of cinammon. Also some seasoning. Wow! What a transformation! So good that now we are going to serve this with Christmas dinner!

samiwolf - i prepared this recipe using your suggestions.  But instead of honey, I used agave nectar and I omitted the raisins.  It was so delicious!  My husband couldn't stop raving.  I served it with Tofurky Kielbasa sausage, baked sweet potato and some steamed spinach.  One of the best vegan meals I have made to date!  Thanks to spookychicken for posting this and to samiwolf for your modifications!

i love red cabbage as a fall side dish. ive always made it with red cabbage, cidar vinager, 1/2 of a granny smith apple chopped, and a couple tablespoons of organic blackberry  jam. yum!
