Scrumptious Squash Salad

What you need: 

2 squash, sliced 1/4" thick
1 tablespoon extra virgin olive oil
1 tablespoon fresh squeezed lemon juice
2 cloves garlic, finely minced
salt and pepper, to taste

What you do: 

1. Steam squash in a steamer for 5 minutes. Set aside and place into refrigerator until they become cool(er).
2. For the dressing, mix together all remaining ingredients.
3. Pour dressing over squash and proceed to devour. Delicious!

SO HOW'D IT GO?

nothing spectacular unfortunately..
soy sauce saved this dish. nice low-calorie meal though if you omit oil.
