Seitan, Portobello Mushrooms & Spinach in Pita Bread

What you need: 

2-3 pieces cooked Seitan (made mine from scratch & each was the size of a pork chop)
1 6 oz package sliced Portobello Mushrooms
1-2 tablespoons olive oil or olive oil spray
1 9 oz packet of fresh spinach
salt
pepper (freshly ground)
garlic powder (or fresh garlic if you prefer)
2-3 pieces of regular or whole wheat pita bread

What you do: 

Warm up the Pita bread in the oven. Wash & drain spinach. Slice the Seitan into strips. Brown the Seitan and Portobello mushrooms in a large frying pan, using olive oil or olive oil spray. Add the spinach and cook uncovered until it is just wilted. Season with salt, pepper & garlic powder. I am staying away from fresh garlic right now because it is too intense in many recipes.
Wrap Seitan, mushrooms & spinach in Pita bread and enjoy!

SO HOW'D IT GO?

ACTUALLY IT CRIES FOR SOME VEGGIES.  KALE, CHARD, PEPPERS.  AND MAYBE A SAUCE OF SOME KIND.  BUT IT DOES SOUND GOOD.

And I thought I was hungry before, now I'm really hungry.  :-D This looks really good, and its getting close to my lunchtime... Too bad I don't have the stuff on hand for it, but I'm definitely going to try it ASAP! Looks easy enough to add to my lunch rotation. Adding some cooked kale might be good too.
