Seitan Wings
1 cup whole wheat pastry flour
2 teaspoons salt and freshly ground pepper
1 teaspoon cayenne pepper
1 (12 ounce) package chicken style seitan, cut to strips
1 Ener G egg replacer
oil, as needed
1. Preheat oven to 400 degrees F and grease a baking sheet, if baking.
2. Mix the flour, salt, peppers well. This should taste saltier and spicier than you can handle, because the deep frying will tame it down considerably.
3. Mix prepared egg replacer with some extra water, like a wash. Place seitan in the egg replacer, then coat evenly with the flour mixture.
4. If baking, place flour coated seitan on prepared baking sheet, and drizzle with a generous amount olive oil. Bake 25-30 minutes, until golden brown, or deep fry until golden brown.
Serve warm with sauce of choice. I like hot sauce or sweet and sour. Sometimes I add dried oregano and basil to the flour mixture.
