Sick Day Popsicles
chickpeas (dried are better than canned)
rice milk
cinnamon
sweetener of choice (overripe bananas are good here)
vanilla
Heres a way to get sick kids to eat something nourishing and substantial, especially when they have a sore throat or canker sores: Make popsicles! I was inspired by red bean ice cream and white bean pie.
Blend chickpeas or other bland, sweet beans your child likes with just enough rice milk to make a smooth paste. Then add seasonings and enough extra milk to make it pour able. Remember that freezing diminishes flavor, so do make this liquid somewhat sweeter than you might otherwise. Pour into molds and freeze.
Other smooth, sweet, nutritious additions are winter squash, sweet potatoes, and apple sauce. Canned beans are a bit salty but will do in a pinch (like if moms sick, too!) Apple or white grape juice also make good sweeteners. We sometimes have these for breakfast on sick days when appetites are dull and kids need something cheerful.
These popsicles have saved the day for me during a prolonged flu. I hope they help your family, too!

The flavor and texture of these were great!!! :P I made these for myself and they were very tasty. I used a 16 ounce can of garbanzo beans (drained and rinsed), rice milk, brown sugar, and a splash of vanilla extract. I blended into a smooth paste. The flavor of the beans was indiscernible and texture was good. TY Anna!!
