Simple Dorm-Compatible Burrito Filling
1 16 oz. can lard-free refried beans
1 16 oz. can black beans (or other choice prepared beans)
1 16. oz. can corn
1 cup salsa
Mix all ingredients in a saucepan and simmer for at least 5 minutes or until heated through. (a little more time should make the flavor really come alive)
Spoon into your favorite tortillas, wrap, and enjoy!
It works just as well to combine all the ingredients in a microwave-safe dish and nuke until heated through (thus making this dorm room compatible!), but I like to simmer mine on the stove now that I have one.
This is just a basic filling for colorful, yummy, and fiber-and-protein-heavy burritos. I sometimes mix in a half cup or so of reconstituted textured soy protein for another protein variety. It can be easily dressed up with additional spices (chili powder, for instance) and veggies if you wish, but it is surprisingly good as is.
Also makes a delicious dip for tortilla chips!

SO HOW'D IT GO?
Incredibly quick and easy.
I used just refried beans and salsa, but added cumin, cayenne and chili powder as well. Turned out very nicely.
I spread it on a crispy tostada tortilla. Nice.
