Simple yet Amazing Banana Muffins
What you need:
4 large bananas
1/3 cup milk (whatever kind)
1 teaspoon (5 ml) vanilla extract
1/2 cup margarine
3/4 cup sugar
2 cups flour
1 teaspoon (5 ml) baking soda
1/4 to 1/2 cup chocolate chips or nuts (optional)
What you do:
Blend bananas. Add milk and vanilla.
Mix margarine and sugar and add to previous.
Combine wet ingredients with flour and baking soda.
Add 1/4 to 1/2 cup chocolate chips or nuts (optional).
Fill about half full 10-15 muffins or 24 mini muffins.
Bake at 350F (180C) for about 10-12 minutes, or for 45-60 minutes if making a loaf.

This recipe was amazing! I used 1/2 cup of sugar instead of 3/4 to ease up on the sweetness. Also, used 1 cup of white flour and 1 cup of wheat flour. Turned out great! Thank you for your recipe. Definitely will be making these again.
Yummy! I used patty pans and this recipe made 22 of them. These taste even better after a few days - that is if they last that long without being eaten!
i used 1/3 cup canola oil and 1/2 cup of sugar instead and added blueberries! yummy!
also these took about 20min to bake.
really good and simple recipe! came out really yummy. i topped mine with some pecans. made 12 muffins, they took about 20 minutes to cook. i'll def be making these again, thanks for the recipe :) my hubby ate 3!
The flavor was excellent, but the texture was too moist... Still batter-y in the middle while bottom/ sides of 1st 6 muffins were overdone... I did sub water instead of soymilk, and maybe my bananas were too large...? anyway, I ended up adding more flour and cooking the rest of the batter as 'banancakes', drop-biscuit style, which worked better& have made tasty grab-&-go breakfasts this week. I used 1/2 cup crushed peanuts, & it gave it a really nice 'peanutbutter-banana' flavor... I'll probably make this again, and just try 2-3 bananas/ a little more flour/ etc, because I really did enjoy the flavor; just need to tweak the texture a tiny bit. Thanks for the recipe!
this is the 2nd recipe i've tried from vegweb and they were great! i made them with whole wheat flour and brown sugar and made them into mini muffins. i had to put most of them in the freezer so i wouldn't eat the whole batch today. thanks!
I have made these twice and they are delicious!!! Very moist and a rich banana flavor...yum :)>>>
I did, however, have to bake them for 25 minutes.........

I make these ALL the time! They are always a hit. Because this recipe makes more than 12, I normally make 1.5 recipes which makes around 20-22. I've made them with both unbleached flour and whole wheat. I use both walnuts and chocolate chips. ;)b

It does take more like 18-20 min to bake them. ;)
Just made these, sub applesauce instead of the oil, used 2/4 c brown sugar because the bananas were ripe, added chocolate chips. My son said they were good. Pls excuse the picture of me-my sons friend didn't know what he was doing. It is a cute picture though ;) by the way, had extra batter left, made a small loaf. Can anyone tell me why baked things come out more chewy when you use applesause insted of oil? Just thought I would ask.
Probably moisture, do a search on oil substitution in baking. They would normally tell you how to account for the moisture factor when baking. (e.g. if you use a wet ingredient like applesauce, you'll probably need to increase a dry ingredient like a little more flour...etc.)
I used half oil and half applesauce and a bit less sugar than called for. I topped each with a single pecan also. I baked them into muffins for about 30ish minutes because I wanted to develop a nice crusty outside and a fluffy inside. I made these last night, and they taste even yummier in the morning when I popped one (or two :-[ lol) in the toaster oven. Yummmm!
