Southwestern Wrap
1/2 cup corn - cooked and cooled
1 small green pepper roughly, diced (about 1 cup)
1 small red pepper roughly, diced (about 1 cup)
1/2 small red onion (about 1/3 cup)
1 cup cooked black beans
1-2 teaspoon cumin (to taste)
few sprigs of cilantro, chopped small
1-2 tablespoons vinegar (plain or apple cider)
few large pieces of lettuce, any kind
some vegan chedder cheese - optional
4-6 8 inch wraps, any flavor (I like spinach)
Mix veggies and beans together in bowl and toss with cumin, cilantro, and vinegar. On a wrap, place vegan cheese, then a good helping of the veggies, and top with lettuce. Wrap up and enjoy! Servings depends on how much filling you give. Don't use too much our your wrap will explode and be hard to eat (still yummy though)!
