Spaghetti and Meatballs

What you need: 

1 pound of tofu or package of Gimme Lean sausage flavor
parsley
1/2 cup chopped walnuts
lemon juice
pepper
lots of garlic, best crushed and finely diced but can be powdered
bread crumbs
(optional) fake vegan parmesan cheese - sold at most health food stores
can of tomato sauce or your favorite spaghetti sauce
spaghetti or other pasta
olive oil

What you do: 

Get a big mixing bowl and crumble 1 lb of drained tofu or Gimme Lean sausage flavor. Finely chop 1/2 cup of walnuts and add to mix. Stir well, adding liberal amounts of parsley (I add half a spice container), pepper, lots of garlic (powdered or if fresh, I use several cloves), 1/4 -1/3 cup of vegan bread crumbs, 1/2 container of fake parmesan cheese (optional) and 1/3 cup lemon juice. Mix so that everything is well distributed. Roll into medium sized balls (should make about 15 balls). Heat olive oil in large skillet or wok until very hot. Add meatballs and and brown well, adding powdered garlic and pepper as you toss them in the olive oil. When they are very well browned (5-10 minutes), pour can of spaghetti sauce or tomato sauce over the meatballs. If just tomato sauce, add some oregano and basil. Cook for 1 minute over medium heat, and serve over freshly cooked spaghetti or other pasta.

SO HOW'D IT GO?

These meatballs were absolutely delicous!! The rest of my meat-eating family loved them! Thank you for posting this recipe, i will definitely make this again!  ;D

It was also my first meatball experience, and I've
made them twice and they've never fallen apart!
I used a can of nutmeat ( it's like a mix of protein and peanuts, tastes like meat somehow) and 3 slices of bread crumbed in the blender. I also added a tablespoon of organic minced garlic and one of chili.
Then I fried in olive oil til browned on all sides, then threw in the organic basil and garlic pasta sauce and served on top of organic spaghetti. It makes sooo many huge meatballs so I am eating this all the next day. It's great cold too ;)

;)b This was my first time EVER eating meatballs in my life (vegan, meat or otherwise) and it was totally enjoyable!
Alterations based on what I had:
**used panko for the breadcrumbs
**did not use walnuts
**used YVES crumbles
**used flax + water as a "binder"
**baked in the oven for a long time

I think next time I would like to use regular breadcrumbs...I think the panko didn't really mesh as well as they could have. But altogether AWESOME!!

these were so delicious!! tasted just like the real thing. i didn't realize how much i missed meatballs til i took a bite of one of these guys. yummm

My children and I simply loved this dish. I used wheat germ in the "meatballs" instead of bread crumbs. They were delicious!

i thought this recipe was amazing. i made these meatballs for a dinner party for a bunch of meat-eaters and they couldnt believe how good they were. they all asked for the recipe. they are not as good the next day however, they get a little soggy. i have frozen them on occasion so i had them available in a flash! i do use the gimme lean sausage i think the tofu would not hold it's shape as well!
i have made these a bunch of times now and they always comeout so good!!!
