The Speckled Jack-O-Lantern Pumpkin Pudding
15 oz can pumpkin
3/4-1 package silken tofu
1 tablespoon pumpkin pie spice or equivalent
1/4 cup sweetener (+or-)
1 teaspoon vanilla
1/2 teaspoon salt (opt.)
mixed nuts or whipped topping equivalent for garnish
Place all ingredients in a large mixing bowl, in no particular order, and mix together with electric beaters. If you'd rather, mix all ingredients in a blender.
The pudding will come out with a bit of a speckled appearance from the tofu and pumpkin, but I assure you this is very tasty. I made it up about a half in hour ago, and if you can find where improvements need to be made, I'd love to hear them. Since I had no whipped cream replacement readily on hand, I tossed some mixed nuts on top and it was very good. I hope you enjoy it too !

Blood Rose 13: Canned pumpkin can be found in any typical supermarket -- you don't need to go to a special store. Usually it is stocked in the canned fruit aisle. Libby's is a popular brand, at least in the US. I haven't made this recipe, but I'm sure you could use fresh pumpkin if you have the time to cook it. Canned pumpkin simply saves a LOT of time. If you do look for canned pumpkin, make sure it is NOT pumpkin pie filling -- that is different than canned pumpkin, but they are often sold side by side.
Nkace: No, if you use the canned pumpkin, you do not have to cook it, but as mentioned above, you will have to cook it if you decide to use fresh pumpkin.

This is extremely similar to a recipe I just made. I can't have sweetners right now, so I used amazake and the result was lightly sweet. I didn't add vanilla but I will remember to do that next time! When I can have sweetners again I'll try yours with some rice syrup or brown sugar.
BTW I ate mine as a pudding, but it also was EXTREMELY delicious as a bread spread.

This was delicious. I like mine a little sweeter, so while mixing, I tasted and added 1/4 cup sugar along with the 1/4 cup sweetener. I found a vegan whip cream and sprinkled on chopped pecans. Very pretty, too.
