Strawberry Apple Burrito

What you need: 

1 large whole wheat tortilla
1/2 royal gala apple, cored and thinly sliced, divided
sugar, to taste
pumpkin pie spice, to taste
3 to 4 strawberries, thinly sliced
1/2 tablespoon peanut butter
margarine, as needed

What you do: 

1. Layer 1/2 the apples on tortilla and add a little sugar and spice. Add a layer of strawberries, and top with more sugar and spice.
2. Top with the remaining apples, and again top with the sugar and spice. Spread a very thin layer of peanut butter around the edge of the tortilla.
3. Fold two sides in and then fold the other two sides (to get a square). Spread some margarine on the folded side and press down in a frying pan over medium-low heat.
4. Spread margarine on the other side before you flip it over. Cook until both sides are nicely browned, about 5 to 7 minutes on each side.
I like to cut it down the middle and dip it in a maple syrup.

SO HOW'D IT GO?

This was so good! I didn't have strawberries, so I used bananas instead and it tasted amazing.

great idea!  I don't have any of the ingredients on hand now, but as soon as strawberry season starts,  this is what I am going to be making!  What would be a good sub for the apples?  Pears?  Almonds butter easily subs for peanut butter, and probably tastes better anyways...allergies make cooking fun  :D

This recipe should definately be moved to kid-friendly recipes, because I think any kid would love this!

Yummy fabulous.  I changed mine a little.  Instead of pb, I used vegan cream cheese.  I also found some rice mellow in the fridge, so what the heck, I threw that in, too.

I used strawberries and green apples for the filling.  Mine was more of a quesadilla than burrito.  I wanted to have enough room for all of my filling.  It was kinda messy, but yummers!
