Sundried Tomato Pasta and Beans
1 can cannellini beans (white kidney beans)
1 jar sun-dried tomatoes
1 onion, diced
2 carrots diced
kale
a little tomato sauce or the liquid from the sundried tomatoes
a dash of red pepper flakes
dried basil
olive oil
1 package pasta (I use brown rice Rotini)
Cut up onion and carrots and dry in olive oil until fairly tender.
Add the sundried tomatoes (I get the ones in the jar from Dollar Tree!) and add a little of the oil/liquid that they are in. You can also use a little tomato sauce if you want it to be more saucey.
Add in the kale and a little water, enough that it isn't all sticking to the pan! and let cook for a bit until the kale is done to your liking.
Boil water in another pot and cook pasta.
Add beans in the dish and then the spices. I put too many red pepper flakes the first time I tried this so beware, haha! I like hot food but not that hot!
Add the pasta last and mix it all together!
SO HOW'D IT GO?
I made a batch of this yesterday so I could bring my lunch this week. I used ground cumin, ground ginger, garlic powder and curry powder cause that's what I had on hand. Very good, glad I have something new to do with kidney beans!
