Super Easy Black Beans & Salsa
1 - 14 ounce can black beans (I use low sodium beans)
1 cup salsa (I use Kirkland Brand Organic)
1 - 4 ounce can roasted diced green chilies
1) Combine all on the stovetop and simmer until warm.
I like simple ingredients and feel if you get too much into a dish you loose the flavors...one night I didn't know what to make so I grabbed what we had in the pantry and this is what came out. I wasn't in the mood to sauté anything not that it mattered since we were out of pretty much everything ;)
Can be served alone, with rice or as (my 2 favorite ways to serve them):1. Burritos w/ whole wheat tortilla + brown rice 2. As enchiladas (heat your favorite enchilada sauce, dip a whole wheat tortilla to moisten & add salsa beans, rice, olives then wrap up (i can fit 4 in an 8x8 glass pan). Pour a bit of extra sauce over the top of to keep them moist while in the oven. Bake at 350 for 20 min…I can’t have soy so I don’t do the “fake” cheese…I think they have plenty of flavor without it :)
Recipe also doubles easy (I usually stick to just 1 can of chilies).
My husband loves them and I get asked to bring them to lunch often by coworkers…I hope you enjoy it as much as they do.

I just microwaved a can of black beans in a cup or so of salsa, and it was delicious!
