Super Easy Scones
What you need:
250 gr (2 cup) flour
1/2 teaspoon salt
50 gr (2oz) vegan buttery spread
3 teaspoons baking powder
1/2 cup soymilk
1/2 cup water
1 teaspoon vanilla
1 tablespoon sugar
What you do:
Sift dry ingredients in a bowl. Add vegan buttery spread and blend. Combine water, soymilk and vanilla. Add them to the previous mixture. Stir until you get a nice dough. Extend the dough until 0,3 in (1cm) thick and cut it into shapes. Put them over an ungreased baking sheet. Cook them for 20 minutes approximately at 170 ºC (340º F).

my turned out to be like a pancake :'( they are good but they are the farthest thing from a scone :'(
Do you cut the margarine into the dry ingredients as if you were making pastry? I assumed that is how to do it & after I added the wet ingredients, I had a beautiful dough that rolled out very nicely. However, after baking, they were rock hard. Didn't puff up nice & light like I expected but were flat as a pancake instead.
I was very disappointed with the results.

i had to alter this recipe as well. i ended up using 3/4 cup wheat flour, 1/2 cup pastry flour, 1/2 cup soymilk, no water, 1/4 cup margarine, the vanilla, added a teaspoon of lemon extract cuz i love lemon in everything. it was still too runny to roll out so dropped it on the cookie sheet... next time i will grease the cookie sheet because the scones got stuck to them.
other than the sticking to the pan... yum!! :)
I just mixed up a batch of batter and it's nothing like dough. 1 cup flour to 1 cup liquid and it's way too runny to roll out. I'm going to try adding flour. Anyone else have this problem? I'm almost certain I measured correctly....
adding fruit should be fine! If it's "wet" (fresh, frozen) instead of dried like raisins, I'd cut the liquid a bit to compensate.
hmm.. i really don't know, but if you're brave enough to try it, i would love to know the results ;)
