Super Easy Tasty Chocolate Cake
3 cups all purpose flour (I used 1/2 whole wheat flour, 1/2 all purpose)
2 cups sugar (I used 1/2 brown sugar)
1/2 cup cocoa powder
1 teaspoon salt
2 teaspoons baking soda
2 tablespoons vinegar
2 teaspoons vanilla extract
2/3 cup vegetable oil
2 cups cold water
1 cup bitter chocolate, cubed
1/4 cup vegan margarine
1. Preheat oven to 350 degrees Fahrenheit. Grease a cake pan. Mix together flour, sugar, cocoa, salt and baking soda.
2. Add vinegar, vanilla, oil, and water; mix well.
3. Pour into prepared pan and bake 45 minutes, until toothpick comes out clean. Let cool a bit.
4. To prepare the frosting, heat chocolate in a small sauce pan with the vegan margarine on a medium heat. When everything is melted, coat the cake with it. Let it cool one more time!

This is delicious! I substituted 1/2 cup of sugar with 1/2 cup of cocoa, and wow, it was incredible! Incredibly dark and moist.
can you break down your measurements for a dum american? Sounds like something my husband would like.
I substituted the 2 cups of water for 1 cup of regular soy milk and 1 cup of strawberry soy milk. I then added an extra half a cup of water and another 1/2 cup of cocoa powder (to make a total of 1 cup cocoa powder) cos I like the chocoloaty taste. It came out incredible! .. I thought the icing sounded a bit plain so I jazzed it up a little: I melted the chocolate, added double the margerine and a cup of icing sugar. I thinned it out with liberal amounts of organic soy cream. It was the nicest cake I have ever tasted!
