Super Yummy Chili
2 tablespoons vegetable oil
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
1 cup celery, sliced
2 cloves garlic, minced
1 medium zucchini squash
1 large onion, diced
1 large tomato, cored and diced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) tomato paste
1 1/2 tablespoons chili powder
1 tablespoon dried oregano
4 teaspoons ground cumin
1 teaspoon paprika
1 teaspoon salt
2-3 teaspoons hot sauce (I use Frank's)
1 jalapeno pepper, seeded and minced
1/2 teaspoon black ground pepper
30 ounces canned red kidney beans, drained
1. Heat the oil in a saucepan and add all veggies, except tomatoes. Saute until the veggies are tender.
2. Add the tomato cook a few more minutes. Add the crushed and pasted tomatoes, kidney beans, and seasonings into a crock pot, and add the veggies.
3. Simmer about 30 minutes over low heat, stirring occassionaly. Cook longer for more flavorful chili.

mmmm! mine is simmering on the stove right now... i replaced celery with carrots, and didnt have tomto paste so i added a half a jar of spaghetti sauce that was just getting old in the fridge... its a great dish to toss leftovers into! i also added a can of chickpeas.
Excellent recipe! I made this for a holiday party and it was a hit. To appease the meat-lovers, I left out the salt and added 1 package of Gimme Lean faux sausage. They never suspected a thing! ;)b I also had a whole bunch of dry beans in my pantry, so I I decided to add a variety instead. I soaked, cooked, and then mixed-in 2 cups of Adzuki beans, 1 cup of black beans and 1 cup of Red Kidney beans- all in place of the 30oz can called-for in the recipe. A fabulous, hearty chili!
So far, it's delicious! It's still simmering on my stove, but I've been tasting it often. ;) I made a few little additions though- a 15 oz. can of black beans (drained), a splash of beer and a splash of lime juice. I thought they livened it up a bit. Can't wait to take it to the potluck saturday. ;)b
Awesome Chili recipe. I made it for a potluck gathering and everyone loved it. I added soy crumbles and soy sausage w/cheese and jalapenos. I also added another can of crushed tomatoes to thin out chili for the huge crowd we had. Excellent!
Yes it was great! Very Good but maybe a little more spice?
This was a great recipe. The only thing we added was a chili pepper. We also chopped the veggies fairly big so it was a really chunky hearty chili. Very Very Good. Thanks for the recipe! :D
This recipe was really good; My family enjoys a more aromatic chili (and spicier) :P so I increased the cumin and chili powder and tossed a good bit of cilantro right in.
I also added some veg."not chicken" chicken breast patties.
