Sweet Potato Bean Loaf
What you need:
1 large sweet potato, cubed
2 carrots, sliced
1 cup soaked white beans or 2 (15 ounce) cans
olive oil, as needed
1 onion, sliced, optional
cumin, to taste
salt and pepper, to taste
What you do:
1. Boil sweet potato and carrots until very soft. If using dried beans, boil for about 1 hour, or until tender.
2. Fry the onion in some oil, add spices, and put aside.
3. When all ingredients are ready, mix together, mash all and form into loaf. Consistency will be dry, add water to moisten if you like. Slice and serve!

SO HOW'D IT GO?
so i just gave this a whirl. it tastes awesome but the consistency is indeed pretty mushy. i boiled the sweet potato and carrot chunks... was i supposed to bake them instead? i thought this was idiot proof! :D
haha sorry!! i boiled everything when i made it. it is a little soft at first--but as it sits for a day or so it dries out making it more loaf-like. also, of course the softness depends on water content. another idea--make the first night's batch of this a tasty "mashed sweet potato" side dish and save the rest. the next day it can be a loaf!
any ideas on firming it up? baking?

Hiya, I don't bake it. If you drain all the water from the beans, the consistency that is left is dry and pretty loaf-like. It might be interesting to see what happens if you bake it, though. Good luck!
This sounds good, but I have a question - does it need to be baked at all? I would think it would be too mushy without being baked. It sounds yummy!
