Sweet Potato Curry with Sticky Rice
1 can coconut milk
1 tablespoon Thai red curry paste
2 small or 1 big sweet potato cubed
1 chopped onion
2 cloves garlic, chopped
any other root vegetables, chopped
soy or vegan fish sauce (to taste)
cooking oil
2 cups uncooked sticky rice (also called sweet or glutinous rice)
This is a super easy and super yummy recipe.
Curry:[br] Warm up some cooking oil in a pot, cook onion until softened. Add garlic and curry and stir for 2 minutes. Throw in the rest of the vegetables and stir until coated. Add the coconut milk and simmer for about 20 minutes, until the vegetables are cooked to your liking. I like my vegetables really soft so I cook them for a long time. Season with soy/vegan fish sauce.
Serve with rice.
Sticky Rice:[br] The rice should be rinsed and soaked for at least an hour before cooking. Boil a pot/wok with some water, just enough that it won't touch the bamboo steamer. Place the rice in a cheesecloth, or on top of some lettuce leaves so they don't fall through the steamer. Place the steamer in the wok/on the pot and steam for about 10 minutes. If you don't own a bamboo steamer, get one. Just for the rice, it's worth it!
I like to eat this dish with my hands, I ball some rice up with my fingers and dip in the curry. Sooo good.

except I've been to stores in the US (Ohio no less) where they sell orange YAMS right next to WHITE sweet potatoes.

As they have completely different tastes and textures, which to use is still the question. :)

I think you got it backwards... you can't usually find true yams in the United States. 99.9% of those orangey potatoes sold in your neighborhood grocery actually ARE sweet potatoes. Yams are rather large African tubers and you can only occassionally find them at the Caribbean/Latin markets... We enjoyed this soup. Followed your recipe and directions and I would make the soup again. I liked the sharp curry taste combined with the sweet taste of the coconut milk and sweet potato. I didn't make the sticky rice though. I had leftover rice and we just used the leftover rice. But I will keep the recipe and make sticky rice another time. ;) thank you for sharing the recipe. I hope it was okay to add it to my blog.
