Sweet Potatoes with Apples and Walnuts
What you need:
2 large or 4 smaller sweet potatoes, peeled and diced
2 Granny Smith apples, peeled and diced
1 cup raw sugar
1/4 cup water
1/2 cup coconut milk
1 teaspoon cinnamon
1 teaspoon sea salt
1/4 teaspoon ginger
1/4 teaspoon cloves
1/4 teaspoon nutmeg (I use freshly grated)
1 cup walnuts
What you do:
Preheat oven to 375 degrees F.
Place sweet potatoes and apples in a baking dish and bake for 1/2 hour, or until sweet potatoes and apples are soft.
In a saucepan, combine sugar and water. Gently stir and cook until the mixture turns a dark amber color, but don't let it burn! Slowly stir in coconut milk. Remove from heat and stir in remaining ingredients. Pour into sweet potato mixture and mix well.

Hey all, just wanted to let you know I changed the recipe to include 1 cup of coconut milk, instead of the margarine.
I am glad so many of you have enjoyed this recipe. Thanks for all of the feedback.
Oh, I almost forgot. I also don't chop my walnuts anymore. I think it looks prettier with walnut halves.
I also made this for Thanksgiving this year, and it was so, so good! I'm having myself keeping myself away from the leftovers.
I just discovered this recipe and so far I've made it for friends and family who consist of meat-eaters and foodies and everyone has loved it! Great recipe!
I just made this for my non-vegan family for Thanksgiving and everyone loved it! I followed the recipe to the T using 1/2 cup brown sugar and 1/2 cup maple syrup and it was delicious. There were so many different textures working together, and before it would start to taste too cinnamon-y, you would get the flavor of the cloves and ginger to balance it out. Perfect! My mom is having me make it for Christmas too. :>
WOW!! This is soooo delicious! I made this on Thanksgiving for all my non-vegan very critical family members and they absolutely loved it. I heard a few comments that this was the most delicious thing they ate at dinner that night! I used brown sugar and pretty much followed the recipe exactly as is. Very easy, I highly recommend this recipe for any holiday meal or when you need some "comfort" food
one more thing - my glaze got really hard as soon as I poured it over the apples and potatoes and kind of clumped up. Was this a result of cooking it too long, or too hot? Or something else?
I'm not sure. It may have been the lack of butter.?. The sugar could have crystallized the way it does when messing up caramel. Maybe all that butter keeps that from happening.
I've prepared this dish a few times without incident. I used the ingredients as written (plus 2 chopped pears). I think I heat the sauce over medium-high heat, or whatever is minimally enough for the boil, and only boil it for the two minutes total.
de-lish! These were a big hit with my military husband and all his friends at his work's Thanksgiving dinner today. In fact, my husband requested that I make them again tonight to go with dinner. Needless to say we didn't have any leftovers to bring home with us!
I used only 2TB of the margarine (Smartbalance) and much less sweetener, and it was still really good.
