Tangy Tempeh Sandwiches
1 block of tempeh
4 tablespoons soy sauce
4 tablespoons lime juice
1 1/2 teaspoons sugar
red pepper flakes to taste
powdered garlic to taste
3 teaspoons peanut butter
oil
spinach leaves
whole wheat buns
Slice the block of tempeh into two-inch strips.
In a bowl, mix together the soy sauce, lime juice, sugar, red pepper flakes, and powdered garlic.
Place the tempeh slices in a flat container (like a casserole dish) and pour the mixture over it. Leave it to marinate for 20 minutes, turning the pieces over after 10. Save the marinade.
After the 20 minutes are up, heat the oil in a frying pan and add the tempeh (not the marinade!). Fry on all sides until brown.
In a small bowl, combine the marinade mixture and three teaspoons of peanut butter. Using a fork, mix it together until all the liquid is soaked up into the peanut butter.
Lightly toast the whole wheat buns. Spread some of the peanut butter mixture on them. Add some spinach leaves. Take the fried tempeh and cut it in half to make it flatter and easier to bite! Add that to the sandwich and enjoy!
SO HOW'D IT GO?
I used Tamari because I didn't have soy sauce, perhaps that changed the flavor of this sandwich because it was WAY too salty. Don't use Tamari on this :(
I put this into a salad and added one teaspoon of tahini into the soy sauce/lime juice mix which my bf used as a salad dressing. He like it a lot. Thanks!
Great Recipe! I topped the tempeh strips with green leaf lettuce and slices of red onion. It was delicious!
My first foray into the vegan lifestyle has me trying this recipe for beginners. I enjoyed it a lot and thank you and everyone who participates in this website for their help in getting started down this new path.

I liked this a lot. I did have to tweak the peanut butter mixture to make it spreadable (by adding more PB and less marinade) and I added more sugar to it. (I wonder if the measurement for PB is supposed to be 3 tablespoons instead of teaspoons.)
I served this on toast, but it would have been great in tortillas too. my one friend made it into a simple salad: spinach, carrots, tomato, the fried tempeh strips, and the peanut sauce as a dressing. yum! three people gobbled down one recipe. it's a nice way to impress someone with what seems like a simple sandwich... I'll be making it again.
Excellent! I tried this with tahineh instead of PB because I don't care for PB, and it worked out nicely, though probably a bit drippier than PB would be. Nice one! :)
