Thumbprint Cookies
2 cups all purpose flour
1/2 cup soy flour
1/2 teaspoon salt
1/2 teaspoon baking powder
2/3 vegan margarine
1 cup sugar
2 egg replacers (http://vegweb.com/index.php?topic=7678.0)
1 teaspoon vanilla
1 1/2 teaspoons orange zest, divided
2/3 cup powdered sugar
3 tablespoons raspberry preserves
1. Preheat to 350 degrees F. Grease a baking sheet. Mix flours, baking powders and salt; set aside.
2. Cream margarine and sugar, then add egg replacers, vanilla and 1 teaspoon zest. Mix all, then roll dough into balls (about 1 1/2 tablespoons worth of dough) and place on prepared baking sheet.
3. Make an indentation in the middle of each ball (use your thumb, the end of a wooden spoon, etc) about 3/4 the way through. Bake 10- 15 minutes, until the indentation edges are set, then let cookies cool.
4. Mix powdered sugar, 1/2 teaspoon zest and about 2 teaspoons water; drizzle over cooled cookies. Fill indentations with the jelly (about 1/3 teaspoon in each cookie).
These are tasty and look excellent. Use your favorite flavor of jelly for the center.

SO HOW'D IT GO?
What does the soy flour do in this recipe? Could I substitute chickpea flour? Or just more all purpose flour?

I did not use soy flour, nor zest.
These are sooo good! I used 2 tbsp of corstarch plus 1/2 tsp baking powder whisked with scant 1/2 cup water and 2 tbsp oil for the 2 egg replacers. I rolled out the dough and used a fluted 3" and 1 1/2" biscuit cutters to make the holes for the jam, I did 1 3" layer, and then a 3" layer with a 1 1/2" hole cut out stacked on top. Thanks for a great recipe!
I have made these cookies twice now. The first time with the powdered sugar mixture drizzled over, and they were WAY too sweet. Tonight I made them without, and they were great! I used sunflower oil, btw, instead of margarine, and raw sugar. Awesome!
