Tofu and Mushroom Tacos
1/2 tablespoon olive oil
1 cup orange bell pepper, sliced
1/4 pound firm tofu, chopped
1/2 cup mushrooms, sliced
1/4 cup red onion, sliced
1/4 (1 1/4 ounce) package taco seasoning
1/4 cup water
3 hard taco shells
2 tablespoons salsa
1/4 cup vegan cheese, shredded
handful baby spinach and greens salad mix
1. Heat olive oil in a pan on medium heat. Add pepper, tofu, mushrooms, and onions into pan and cook until tender.
2. Add in the taco seasoning and water and let simmer for 7 to 8 minutes.
3. Fill taco shells with the mixture adding the salsa, cheese, spinach and greens on top.
Source of recipe: I was in the mood to have some tacos for dinner and threw this together with what I had on hand. Turned out to be pretty tasty in my opinion so thought I would share it.
SO HOW'D IT GO?
I did this only I used 1 TB from the taco seasoning recipe from this site divided:
1.5 tsp were cooked in to my veggies and the remaining 1.5 tsp went into my cornstarch/rice flour bread coating for my tofu (I love crunchy fried tofu cubes in EVERYTHING) shroomiez and crunchy taco shells are where its at. thanks!
