Tofu Reuben

What you need: 

1 block firm tofu, sliced into 1/2" thick slices
1 can sauerkraut
1/2 head green cabbage
8 ounces soy mozzarella cheeze
1 small yellow onion
8 slices rye bread
Braggs Liquid Aminos or soy sauce
salt and pepper to taste
canola or olive oil

What you do: 

Chop cabbage and onions and saute with some oil until softened. Then add in sauerkraut.
Meanwhile, saute tofu in a pan with some oil. Add Braggs or soy sauce to tofu slices while cooking. Saute until lightly browned on both sides.
Add soy cheeze to cabbage, kraut, and onions & heat until cheeze is melted.
To serve: place 2 slices of tofu on rye bread. Top with sauerkraut and cheeze mixture.

SO HOW'D IT GO?

Think I'll give this a try, but I'm going to marinate the tofu in pickling spices first to see if it gives it more of a corned beef flavor.

This was different, we had it over ginger and chilli noodles instead of bread and i dont think the ginger went well so it spoilt it a bit, but it wasnt too bad. If you like the ingrediants i think youwould like this one

ok rosecurry, im not a great fan of saurkraut BUT i have all those ingrediants and was just wondering what to do with the mountain of lovely cabbage my friends mother gave me today so im going to give it a bash! will report more tomorrow...over and out  ;) kat
