Tofurky Apple Grape Salad Sandwich
1 small cored and diced apple
1/4 cup green grapes, halved
palmful of raisins
palmful of golden raisins
2 tablespoons Nayonaise
3-4 slices Tofurky deli sliced turkey, torn into small pieces
1 veggie wrap
black pepper
This is one of my favorite sandwiches of all time. It is a fusion of a salad I had at a restaurant which contained apples and raisins, and an apple raisin turkey wrap I saw in a magazine, both occurring during my pre-veg*n days. This is a truly delicious and simple sandwich.
Put all ingredients, except the wrap, in a medium bowl. Stir to combine. Grind fresh black pepper into it and stir. Top your wrap with the mixture and roll up tightly. Cut into two halves and enjoy!
Note: You can substitute the wrap with a tortilla, a piece or two of crusty bread, or you can even pile it into a bowl and eat it as is. =D
SO HOW'D IT GO?
This is really good ;)b I soaked my chopped apples in some pineapple juice beforehand to keep them from browning (I was making it for lunch the next day). Not only are the applies nice and fresh, but the bit of pineapple flavor is really good in the veganaise. I also added some chopped walnuts and Tofurky makes a peppered flavor now...perfect!
