Tortilla Tower Bake
1/2 cup cooked rice
1 (15 ounce) can black beans, rinsed and drained
1/4 cup corn kernels (I used frozen)
1 (4 ounce) can green chiles
1 teaspoon hot sauce
1 cup + 2 tablespoons vegan queso, divided (I used Nacho Mom's)
1/4 cup + 2 tablespoons vegan cheddar cheese, divided (I used Daiya)
1 tablespoon fresh cilantro, chopped
salt and pepper, to taste
5 flour tortillas
1. Preheat oven to 350 degrees F. In a large bowl, combine rice with beans, corn, chiles, hot sauce, 1 cup queso, 1/4 cup vegan cheese, cilantro, salt and pepper and mix well.
2. Place 1 tortilla in the bottom of a deep baking dish and top with a large scoop of the rice mixture. Alternate layers of tortilla and filling until all the mixture is used up. A plain tortilla should be on top.
3. Spread a layer of the remaining queso on the top tortilla and sprinkle with remaining vegan cheese. Cover with foil and bake for 25 minutes, or until heated through and cheese melts.

This looks so yum. It's too hard and expensive to come by vegan cheese and queso sauce here, so I might try this with some sort of nooch sauce as well. Can't wait to give this a go :D

Let's review: Cheezy. Spicy. Filling. What is there not to like about this dish!? It was delicious but my tower, as you can see, had some structural difficulties. I can't believe I'm saying this, but it was too cheezy! I think all that "queso" made my layers too slippery OR perhaps my tortillas were too small proportionately. I will try again. Very indulgent, but hey, it can't all be steamed broccoli and quinoa!
i'm not the hugest fan of straight up vegan cheese tho i love me some nooch sauce <3
i find for lasagnas and enchiladas, letting them cool first (typically after sitting out then some fridge time) and then cutting in and reheating make them stay together and help maintain the desired look and shape... if i'm hungry i mack on the thing right when it's sloppy and ready, but when i want a purdy picture or a meal to serve someone i wait until it has been chilled

This looks amazing but I have a few questions so my tower turns out like the beauty in the photo: Is this baked in a casserole dish or is one layer stacked on another on a cookie sheet? Did you use a red sauce on the tortillas- like dip them in enchilada sauce or something? Can't wait to try this.
I baked mine in a deep casserole dish. I did not use enchilada sauce - I probably should have mentioned that I used chili-lime tortillas, that's why they have an orange-y tinge to them! If you want to be adventurous, go ahead and throw in some onions, peppers, or any other veggies to the filling mixture too. I just took the lazy route and used canned and frozen stuff!
