"Tuna" and Raisins
1 15-oz package extra-firm tofu
1/2 cup hummus (roasted garlic flavor is best)
1 tablespoon soy sauce
2 teaspoons water (as needed)
paprika, garlic salt, nutritional yeast to taste (optional)
1/4 to 1/3 cup raisins
I know this sounds odd, but just try it. Raisins make everything better!
Crumble tofu into a medium-sized mixing bowl, mashing with a fork if necessary, until it looks roughly like ground beef. Don't make it too perfect--chunks of varying size are good.
Stir in hummus with a fork. Add soy sauce a few drops at a time. Adjust to your liking/tolerance for salt. If the consistency is too dry, add water a teaspoonful at a time until desired consistency is reached.
Season to taste with paprika, a few good shakes of garlic salt, and a small amount of nutritional yeast.
Mix in raisins and serve. This is tasty on its own, in a sandwich (I especially like it on cinnamon-raisin bread), on crackers, or paired with green salad.
