Twix Bars
Shortbread base:
1/2 cup vegan margarine
1 cup flour (half whole wheat gives a nice crunch)
6 tablespoons sugar Caramel Filling:
1/2 cup sugar
2 tablespoons molasses
3 tablespoons water
1/2 teaspoon salt
1 cup nondairy milk (I use soy)
1/4 cup cornstarch
1 teaspoon vanilla
1 teaspoon butter flavoring, optional Chocolate coating:
2 cups vegan chocolate chips
2 teaspoons canola or olive oil
1. For crust, preheat oven to 350 degrees Fahrenheit. Combine all crust ingredients for shortbread and roll out into two 3 x 12" rectangles. Score each rectangle into 12 Twix-sized pieces and bake about 15 minutes.
2. For caramel, add sugar, molasses, water and salt to a small saucepan. Heat until bubbly. Meanwhile, mix milk, cornstarch, vanilla, and butter extract (if using) in a small glass bowl and add to the saucepan once it's bubbling.
3. Stir constantly and heat again until it boils and the starch has thickened. Let caramel and cookies cool a bit, separating each cookie, and then spread each cookie with a teaspoon of caramel. Pop the caramel cookies in the freezer to quickly harden while melting the chocolate.
4. For chocolate topping, melt chocolate chips with oil either in the microwave or on low heat on the stove. Remove cooled cookies from the freezer and spoon chocolate over each.
Smile! You have a hydrogenated-oil-free vegan Twix candy bar!

;D i really like these! I stumbled across the recipe while looking for shortbread. I think the cookie came out great & the "molasses caramel" is awesome - but it really depends on the molasses that you use. Most of the store bought brands are overcooked & bitter; i had the great pleasure of using homemade molasses that taste like sunshine!!!!!
I found out by happy mistake that you can mix all the ingredients for the caramel together & cook it & it still comes out great! (I missed the part where you cook the sugars first, sigh!) I cooked mine until I had it thick & it thickened more as it cooled.
My only change is that next time (oh yeah, soon) will be to:
1) use decorating a bag wit a flat tip to spread the caramel onto the cookies, but oh what a yummy mess i made!
& 2) somehow thin out my choc chips (maybe with wax & coconut creme...) so that I can dip the cookies so they more resemble twix without my choice of dark choc. chips overpowering the shortbread.

I made some twix for tweat today , and was wondering what do i do with the leftover carmal topping?
I made these and they turned out okay. I think in the future I'll try different shortbread and caramel recipes, but these are yummy. We had a real hard time getting the shortbread dough to cooperate. I only put in a tablespoon and a half of molasses because I don't like it, and we put the chocolate on when everything was still hot and I think it kinda mixed together, so I can't taste the molasses at all and the filling is sort of chocolatey.

Ok this recipe tastes delicious =D but it doesnt look anything like it does in the pic lol. My little bro and I made this and it made waaaaaaaayyy too much chocolate and caramel but well just probly dip pretzels in it =P this doesnt really taste like a twix but more like a super yummy caramel chocolate cookie =)
I am really unsure about these. My two other vegan friends seemed to like them, but as a former chocolate candy addict, I'm a bit disappointed by it. The shortbread could have been baked a bit more longer to get more of a crunch, but honestly, it's the caramel filling that I'm really displeased with. The consistency was way too gummy and gelatin-like, and the molasses flavor was really overpowering. That's not to say I wouldn't make this again... if I could somehow rework that caramel, I think this would be an excellent replacement to Twix. Better luck next time, maybe?
