Vegan Corn Casserole
What you need:
1 (15 ounce) can cream corn
1/2 cup corn meal
1/2 cup vegan butter (I use Earth Balance)
1/2 cup vegan cheddar (I use Follow Your Heart Cheddar)
8 ounces vegan sour cream (I use Tofutti)
What you do:
1. Mix all ingredients in a bowl. Preheat oven on 350 degrees F.
2. Pour mixture into a baking dish and allow to cook for 45 mins to 1 hour or until the top is golden brown.
3. Take dish out of oven and let it sit for 5 minutes to solidify. Cut it up and enjoy!
Source of recipe: This is a popular recipe with my in laws. My mother-in-law loves to makes this all the time and thankfully my husband was able to veganize it so I can enjoy it too.

I made this last night and it came out really good!
I forgot to get cornmeal, so I used the same amount of whole wheat flower and a tablespoon of nutritional yeast and it was still good. When I make it with all the correct ingredients - it will be to die for!
