Vegan Fried Rice
3 tablespoons vegan margarine, or to taste
1/2 medium red onion, chopped
4 cloves garlic, minced
1 cup chopped green beans
1/2 cup chopped carrots
1/2 cup sliced mushrooms
1/3 cup chopped bell pepper (optional)
1/3 cup peas (optional)
2 cups white or brown rice, cooked according to package directions
1/3 (12-ounce) block, firm tofu, cubed
3 tablespoons soy sauce, or to taste
2 teaspoons sesame oil
1 to 2 tablespoons rice vinegar, to taste
1/4 teaspoon sea salt, or to taste
1/4 teaspoon black pepper, to taste
pinch dried basil
1. Melt vegan margarine in a wok. Add onion and garlic; cook until the onion becomes translucent, about 5 minutes.
2. Add remaining vegetables (green beans, carrots, white mushrooms, bell pepper, and peas); cook for 5 to 7 minutes.
3. Mix in cooked rice, tofu, soy sauce, sesame oil, rice vinegar, salt, pepper, and basil; cook for several minutes, mixing every so often.

Such an awesome recipe. I have used this 4-5 times over the last 2 weeks, substituting different veggies and even potatoes! :)
Super good! I doubled it but otherwise made as is, but really you can use any vegetables you have around. I might try adding black beans next time as well.
So tasty I had it for breakfast too!
We made this recipe last night and it turned out GREAT! The only thing we adjusted was that we added more veggies. Super Yummy!!
