Vegan Key Lime Pie
Filling:
5 ripe avocados
6 tbsp key lime juice
1/2 cup melted coconut oil
4 tbsp agave
Crust:
1 cup almond meal/walnut meal
1 cup mejool dates
1/2 tsp salt
1/8 tsp nutmeg
1 tsp vanilla
1 tbsp agave
1. Combine all crust ingredients in a food processor, blending till it sticks together when you pinch it. If your crust seems too crumbly, add a bit of water or more agave. Spread evenly over the bottom of a medium springform pan.
2. Peel and pit the avocados, and combine all filling ingredients in food processor. Process till very smooth. Feel free to add more lime juice, as everyone's taste varies. Pour into springform pan and smooth over, garnishing with shredded coconut if desired.
3. Freeze for at least 4 hours. Let it sit for about ten minutes before serving.
