"This is Vegan??!?!" Taco Dip

What you need: 

1 - 14 ounce can vegan refried beans OR 1 - 14 ounce can kidney beans, drained
1 - 12 to 16 ounce container vegan sour cream (I use Tofutti brand)
1 packet prepared vegan taco seasoning mix (about 2 tablespoons seasoning mix)
1 cup black olives, chopped
2 cups tomatoes, chopped
1 avocado, chopped
1/2 cup green onion, chopped
1 pound vegan "meat" crumbles (optional)

What you do: 

1) Use a spatula to spread the refried beans out on the bottom of a 9x7" tray. If you're using the kidney beans, they spread nicely as one layer.
2) Mix the vegan sour cream with the taco seasoning and spread it gently on top of the beans. Top with chopped vegetables.
3) If using meat crumbles, prepare as directed on package and mix that with a little taco seasoning. Add to top of taco dip.
4) Chill for about an hour or enjoy immediately.
My non-veg friends go CRAZY for this dip, and it's how I bribe them to come to veggie cookouts. Just serve with tortilla chips and maybe some salsa on the side and you will forever be required to bring this to every party. Enjoy!

SO HOW'D IT GO?

My husband loves this recipe so much that he ate less of his dinner, so he could have this dip for our evening snack, after the baby goes to sleep. I love this recipe so much, and also cannot wait to eat it later as well....... and whenever I can sneak it in during the day. Thanks for sharing:o)

Oh, and I don't put any fake meat in the dip either.  A lot of meat-eaters will not eat vegan meat, so I never use it.  The recipe is the best!

It is amazing how good this dip is!!  This is a wonderful, easy, oft-used dish I bring to potlucks, serve at get-togethers, etc.  The omnis can never believe this is vegan!

This was pretty good, though not quite as 'wow' as I expected based on the reviews... I omitted the veggieburger crumbles (neither had 'em nor wished to go shopping), and used a mix of cumin & taco seasoning in Tofutti sour cream, since taco seasoning alone was making it a bit too salty for my taste; also added some lime juice to the sour cream mixture, & still felt like it sort of needed something... next time I may try adding some chipotle peppers or adobo sauce to it also. I added a good handful of chopped cilantro to the chopped onions, and that worked well; also tossed the avocado in lime juice to prevent discoloration... it was very pretty, in a glass serving dish, and I'll probably make it again... just think it needs a bit of chipotle or roasted red pepper or something else... good base recipe, though, and generally well liked by the folks at the potluck. This was awesome!  EVERYONE liked this.  I used Amy's refried black beans. And I squeezed a little lime juice over the finished dip, simply good.

Made this for a potluck at work. It was a huge hit! EVERYONE loved it :)

I did a layer of refried beans, a layer of Tofutti Better than Sour Cream mixed with taco seasoning, a layer of Wholey Guacamole, Morningstar Veggie Crumbles, lettuce, tomatos, black olives, and green onion.

I even had someone tell me it was "orgasmic"!

ok so i made this again for my g-parents 50th anniversary and everyone kept saying how good it was... i omitted the meat crumbles and it turned out better than last time... so yummy it's addicting!

I made a version of this today.  I had forgotten how tasty this dish is.  I just eyeballed all of the amounts, making a small 5x7" dish (didn't want to make a ton, as we have only a 2-person household).  My 1st layer was canned refried beans.  My 2nd layer was simple guacamole (avocado mashed with lime juice).  My 3rd layer was Tofutti sour cream mixed with some Vegenaise, along with cumin, chili powder, paprika, garlic powder, onion powder, Cholula Mexican seasoning, and seasoned salt (had no packaged taco seasoning).  My 4th layer was diced tomatoes.  My 5th layer was sliced green onions.  My 6th layer was sliced black olives.  My 7th and final layer was a bit of shredded Cheezly mature white cheddar.  With some tortilla chips for dipping this makes a great, easy summer snack.

There are no words for how absolutely amazing this dip is.  It's super easy and everyone loves it, even avowed anti-vegans!  Thank you soooo much.
