Vegan Veggie Burger Recipe
1 sweet potato, peeled and chopped
1-1 1/2 cups oats (depending on the size of your sweet potato)
1 tablespoon fresh oregano, or 1 teaspoon dried
1 tablespoon fresh parsley, chopped
1 tablespoon nutritional yeast, optional
pinch salt and pepper
oil, as needed
1. Preheat oven to 350 degrees F, if baking. Steam the sweet potato until tender. Mash the cooked sweet potato, then stir in the oats until you get a texture that will hold together in patties, somewhat like cookie dough.
2. Stir in the seasonings, then form the mixture into patties. You can cook them in a frying pan with a bit of oil until browned, or on a baking sheet lined with parchment paper, or on the BBQ.
3. For baking, put patties in the oven for about 30 minutes, or until the burgers are a bit crispy on the outside.
